Preheat oven to 350 ℉. Grease baking pan (I like to use a floured cooking spray).
In a saucepan, melt butter over medium heat (a quick option is to melt the butter in a microwaveable dish in the microwave).
Remove the butter from the heat and stir in brown sugar and vanilla.
Beat in the eggs until well blended.
In a separate bowl, combine the flour, salt and baking powder.
Stir flour mixture into egg butter and brown sugar mixture just until blended.
Fold in pecans (optional) and then pour batter equally into each well, filling 3/4 full.
Bake for about 30 minutes or until toothpick inserted 2 inches from edge comes out clean. Baker's note: Do not over-bake. Blondies will increase in firmness as they cool and settle.
Allow the blondies to fully cool before removing from pans.
